The ancient recipe
There are many sorts of rice crackers, rice snacks and rice biscuits. They come in lots of colours, tastes and forms. Some are baked, some are fried, some have peanuts in them and some are more like biscuits. RICECRACKS are made of normal eating rice which the Japanese call Sen bei. Other types like the small, usually colourful mixes of various shapes of rice crackers are made of glutinous rice ("sticky rice") and called Arare as oppose to Sen Bei.

It takes a lot of knowledge and experience to make RICECRACKS from Rice Grains. The process starts with thorough inspection of the grains. All irregularities will be removed. Then the rice is washed and soaked. A mill makes the grains into powder which is then steamed and kneaded into a dough. The dough is formed into thin biscuits (pellets) and then dried in hot air. Then the biscuits are baked in ovens to give the finished product. The final step is adding the delicious flavours in which RICECRACKS come and packing them into a foil which ensures freshness for a long time.
